Green Thai Curry

Ingredients

base:

  • 1 can coconut milk
  • 24 ounces chicken stock or about 1 1/2 cans (sub vegetable broth for vegetarians)
  • 2 1/2 TBS fish sauce sub soy sauce for vegetarians
  • 3 TBS lime juice
  • 2 - 3 TBS green thai curry paste
  • 2 heaping TBS cashew butter
  • 5-10 fresh basil leaves

optional (included in the pictured recipe):

  • 1 head cauliflower chopped
  • 1 large portabella mushroom chopped
  • 1 green bell pepper sliced
  • sliced steak cooked

optional (not pictured, but tried and true!):

  • white eggplants sliced
  • okra chopped
  • tomato diced
  • water chestnuts chopped
  • broccoli florets
  • cooked chicken

Instructions

  1. On the stove top bring first seven ingredients to a low boil. Reduce heat and simmer covered at least 15 - 20 minutes, stirring occasionally. (The longer you let it go, the more the flavors will meld).
  2. Add veggies and cook to your desired tenderness.  If you’re using several different types of veggies, try adding some at different times to get a variety of textures.  I like to add my okra at the beginning so it helps thicken the sauce, and bell peppers toward the end so they still have some crunch.
  3. Stir in your protein, and cook until heated through.

TUESDAY

Sausage-Stuffed Breakfast Peppers

Ingredients

  • 8 large bell peppers any color is fine, my market had a sale on the colorful stuff so I went with it!
  • 2 sweet yellow onions chopped
  • 2 pounds mild pork sausage ground
  • 1 tablespoon minced garlic I used jarred
  • 8 eggs
  • salt and pepper to taste

Instructions

  1. Cut off the tops of the peppers, cut away extra from around the stem.  Chop and add to your chopped onion. Clean inside the bottom part of the peppers.
  2. Brown sausage, drain.  Put back on stovetop and add onion, chopped pepper bits, and garlic.
  3. Saute until onion is translucent (but not mushy).
  4. Place peppers upright in an oven safe dish.  Stuff *almost* to the top with sausage mixture.
  5. Cover with foil and bake at 350 degrees for 30 minutes.
  6. Remove foil and use a spoon to depress the stuffing and make a small well in the middle of each pepper.
  7. Crack an egg on top, then return to middle rack of oven.  Broil for 5-10 minutes (watch closely!) until eggs are done to your liking.
  8. Salt and pepper to taste and ENJOY!

WEDNESDAY

Coconut Chicken Strips

Ingredients

  • 2 - 3 pounds chicken breast tenders
  • 8 egg whites
  • 2 teaspoons lime juice
  • 2 teaspoons honey
  • 1 cup tapioca flour/starch cornstarch or arrowroot flour will work as well
  • 4 teaspoons seasoned salt
  • 5 - 6 cups unsweetened shredded coconut
  • Optional: coconut oil for frying

Instructions

  1. Place chicken into a large bowl. Blend together egg whites, lime juice, and honey. Pour it over the chicken and stir well to coat everything. Allow to marinate in refrigerator at least 15 minutes.
  2. In another bowl, combine tapioca flour and seasoned salt. Mix well.
  3. Using a slotted spoon, remove chicken from marinade. DO NOT discard remaining marinade.
  4. One by one, dredge each piece of chicken first in the tapioca flour mix, then in the remaining marinade, then in shredded coconut.
  5. TO BAKE: Place on a parchment or silicone lined baking sheet and bake at 400 degrees for approximately 15 - 20 minutes, until chicken is cooked through and coating is starting to brown.
  6. TO FRY: Heat a layer of coconut oil in a shallow pan on the stove top. When oil comes to temperature (test by adding a drop of water to the pan, if it sizzles and dances then you’re ready to fry). Place chicken tenders in pan and fry on each side until golden brown and cooked through. Add additional coconut oil as necessary.
  7. Serve with some sweet chili sauce or our famous cilantro garlic sauce.

THURSDAY

Chicken Marsala Pizza

Ingredients

  • approximately 1 cup marsala sauce I used a single package of Campbell’s Skillet Sauces, Marsala
  • 1/2 cup sliced mushrooms
  • 1/2 cup thinly sliced red onion
  • 1 medium chicken breast cooked and chopped (learn how to always have cooked chicken on hand)
  • 1 large pizza crust ready for toppings I cheated used two packages of a ‘just add water’ dough, but if you’ve got the time, here’s my pizza dough recipe
  • 2 - 4 cups shredded mozzarella cheese I like a lot of cheese, but do as you please

Instructions

  1. Combine mushrooms, onion, chicken, and Marsala sauce in a bowl.  Mix well.
  2. Pour saucey ingredients onto pizza crust and top with shredded cheese.
  3. Bake pizza according to dough directions.

FRIDAY

Banana Cookies

Ingredients

  • 1 box yellow cake mix
  • 2 eggs large
  • 1 large ripe banana
  • frosting
  • sprinkles

Instructions

  1. Combine ingredients in a bowl and whisk with an electric mixer on high until all ingredients are incorporated and batter is starting to get fluffy.
  2. Spoon batter onto parchment lined baking sheets (you should get about 30 medium/small sized cookies) and bake at 350 degrees for approximately 10 minutes.
  3. If icing, wait until cookies are cooled, then dip in icing then sprinkles.
