I started with the Hibiscus Mango Palmer mocktail, and it immediately set the tone: fruity, refreshing and genuinely made with fresh ingredients, not that overly sweet, syrupy shortcut flavor. It is the kind of drink that tastes like vacation energy in a glass.

Fat Rosie’s is also known for its margarita pitchers, and they fit right in with the restaurant’s “go big” personality. If you are craving that classic Mexican-restaurant comfort: chips, salsa and a margarita after a long week, this place understands the assignment.

Here is what I ordered during my visit, and what stood out:

Guacamole del Día: This is fresh, bright guacamole with that clean lime-and-onion pop that tells you it was made recently, not scooped out of a container. If you are a guac person, it is an easy yes.

Queso Fundido: Warm, melty and rich, the kind of queso that makes the table go quiet for a second. It is indulgent, shareable and absolutely one of the first things I would order again.

Cochinita pibil (pork shoulder): This dish is all about tenderness. The pork is slow-cooked to the point where it falls apart easily, and it is perfect for building tacos bite by bite with tortillas and toppings.

Tampequeña (skirt steak): The skirt steak is grilled with that smoky, charred flavor you want, and it is a great choice if you are craving something hearty. It is also the kind of plate that invites you to build the “perfect bite” with a little bit of everything on the table.

Fajitas, the ones with a serious kick: I am keeping the name TV-friendly here, but the point is the same: these fajitas arrive sizzling and turning heads. If you love the drama of a hot cast-iron plate hitting the table, this is the order.

Rosie’s churro sundae: Dessert is where Fat Rosie’s goes full fiesta again. The churro sundae is big, fun and messy in a way that feels on brand: warm churros, cold ice cream, whipped cream and a “treat yourself” vibe that does not pretend to be subtle.
